When I visited Maui, I was treated by the locals on the way to Hana with an exquisite loaf of mango bread.  I never tasted anything like it before.  I decided to give it a go at my home using the recipe the Mauian locals shared.  Here, I am sharing the joy and hope it brings your family together after a meal.
Serving16 -20 slices
Ingredients:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.  In a large bowl, mix together flour, baking soda, salt and cinnamon.  In a second bowl, beat together the melted butter, oil and sugar until light and fluffy.  Stir in the eggs one at a time, beating well with each addition.  Ensure the butter is cooled to room temperature before adding the eggs.  Now stir in the vanilla.  Blend this mixture with the flour mixture and stir until the mixture is homogenous. Finally add the mashed mango, banana and shredded coconut to the mixture and stir for few minutes to end up with a homogenous batter.  Let it stand for 20 minutes and then pour into the two trays.  Bake in the preheated oven for 60 minutes or until a toothpick inserted into the center of the loaf comes out clean.  Take the bread out of the oven and let it cool for 20 minutes before cutting the slices to prevent it from breaking apart. Serve cold or hot with whipped butter.  Believe me, it is heavenly.
